These delights will tease your taste buds with a creamy sweet fudge flavour while providing a crunchy texture with some slow release energy from the granola.

They take around fifteen minutes to prepare, plus ten minutes of cooking.

Preheat the oven to 170C Fan (190C regular).

You will need three baking sheets, lined with baking paper.


  • 240g plain flour
  • 200g granola
  • 85g bag of fudge chunks
  • 1 medium egg
  • 170g light brown sugar
  • 100g granulated sugar
  • 170g unsalted butter (at room temperature)
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon fine salt
  • ½ teaspoon mixed spice


  • Cream together the butter and sugar, then beat in the egg
  • Sift in the salt, mixed spice, baking power and bicarb. of soda. Mix to form a stiff dough.
  • Gently stir in the granola and fudge.
  • Cover the bowl and chill for 30 minutes.
  • Create around 15 golf ball size portions and place five on each baking sheet.  They will expand when cooking to at least double their width so leave plenty room.  Do not press down the balls.
  • Bake for around ten minutes until the edges are golden brown.  Remove from the oven and place on a wire rack.The cookies will be soft at this stage but will firm up as they cool.

Gluten Free variation

By substituting the plain flour for a typical all-purpose Gluten Free flour (rice flour/potato starch mix) and ensuring the granola is 'Gluten Free' you will create a tasty snack for your coeliac friends.  (also check the pre-packed fudge, just to be sure it is GF)
